Jean-François Guillouet-Huard is something of a Normandy misfit: a Birkenstock-wearing, Stevie Ray Vaughan-loving farmer who, on our last visit, had just bought his village's run-down Protestant chapel to turn into an artists' residence .

But when it comes to the distillation of Calvados, he has great respect for the tradition his family has built in Caligny over seven generations.

Her farm is deep in the rolling bocage of southern Normandy, a world away from the seaside resorts of the English Channel. Barley and wheat are grown here to feed the cattle, which roam freely through one of the largest clusters of mature, standard apple trees in the region.

We first discovered the Calvados that his grandfather Michel Huard distilled at Regina and Hervé's at La Feuille de Vigne in Honfleur. It was the 1990 vintage and we were blown away - a bright, rich Calvados with lots of soul thanks to a single distillation.

Jean-François took over the winery from Michel in 2004 and has had the foresight to maintain the purity of his grandfather's vision (although JF does some exciting experiments!). We were thrilled to finally be able to visit him last summer and at the first tasting in his cellar we knew we had to make a choice.

Thanks to our friend and Calvados guru, Charles Neal, we now have the opportunity to work with Jean-François and can't wait to present our first Calvados Huard selections.
